Fajitas


In a quest to clean out our refrigerator of some veggies I decided to make Fajitas.

I sliced:
2 Zucchinis
1 Red Onion
1 Red Bell Pepper
1 Yellow Bell Pepper
1 Package of Mushrooms
2 T olive Oil
Spices: Pampered Chef Fiesta Party Mix, Salt, Pampered Chef Garlic Pepper
Flank Steak- Also coated in spices.
Whole Wheat Tortillas


In a large skillet saute the vegetables and spices until they are soft. Turn off heat.

In a grill pan that has been heated on High, cook your flank steak. I like rare, so I cook for 3 or 4 minutes per side.

Once cooked, placed UNSLICED on top of veggies and cover for 15 minutes. Then remove the steak and slice against the grain. Serve in a whole wheat tortillas topped with the veggies. (1 PPV per ounce of meat, 0 PPV for veggies, 4 PPV for high fiber whole wheat tortillas)

Broccoli and Ham Quiche



We're semi-back in action. Chloe has made her arrival into our lives. Since her arrival 7 weeks ago I have decided to jump back on the Weight Watchers band wagon. With that I plan on holding my recipes here, with the PointsPlus Values!

Today's Breakfast was a delicious Broccoli and Ham Quiche! I made it to serve 4 people ( a serving is 1/4th the quiche) and is 7PPV.

Ingredients:
2 Cups cooked, chopped, Broccoli
8oz Diced Ham
1/2 C Part-Skim Mozzarella cheese
3 Eggs
1 Cup Bisquick
1/2 Cup Water

Mix everything together and pour into a greased (with Pam) pie pan. Cook in a 350 degree oven until golden brown (about 30 minutes).

Creamy Tarragon Chicken


I've been neglecting this blog since we left for California for Christmas. Then the day after Christmas I found out I'm pregnant with our third child and haven't had the energy or will to cook. Thankfully I think everything is beginning to look up and I have been able to get back into cooking.

Dinner two nights ago was Creamy Tarragon Chicken and it was SO delicious!

Ingredients:
4 Chicken Breasts
1 container of Button Mushrooms, sliced
2C Fat Free Milk
1C Fat Free Half and Half
1T Butter
3T Olive Oil
Salt
Pepper
3 T Tarragon (I LOVE Tarragon, but you can use less depending on your taste)
Parmesan Cheese for topping
1 lb Pasta Noodles (we used Penne)


Lightly salt and pepper the chicken breasts. Then place them in a hot non-stick frying pan with the oil and butter. Cook until golden brown on one side them turn the chicken breasts over to cook the other side. Add the mushrooms and let them brown up. Once both sides of the chicken breasts are golden brown and the mushrooms are cooked down add the milk, half and half, and tarragon. Let everything simmer until the chicken is fully cooked and the sauce has thickened. At this point you can remove the chicken and slice it, as I did, or leave it whole.

Serve over a bed of pasta or incorporate the past in with the chicken as I did.

Top with freshly grated Parmesan Cheese and enjoy!

Chocolate Chip Cookies


My Aunt Polly makes the most amazing Chocolate Chip Cookies and I have been so lucky to receive her recipe (the recipe makes about 6 dozen cookies):

1lb butter, room temperature
1 1/2 C unsalted Butter
2 C Brown Sugar (light)
3 Eggs
1 T Vanilla Extract
6 C Flour
1 1/2 t Salt
1 1/2 t Baking Soda
3 C Chocolate Chips
2 C Nuts (I use pecan or walnuts)

In a large bowl cream the sugar and butter together. Then add the remaining ingredients EXCEPT the Nuts and Chocolate Chips. Mix until well combined and then add the Nuts and Chocolate Chips.

Put 1 tablespoon of the cookie mixture on a cookie sheet, spacing them about 2 inches apart. Place the cookies into a 350 degree over for 8-10 minutes, until they have just a touch of brown around the edges. Remove from the oven and let sit on the cookie sheet for at least 5 minutes. This will help the cookies flatten and keep a moist inside.

After they have cooled for 5 minutes transfer them to a cooling rack and let sit until they have cooled.

Homemade White Castles


A childhood favorite of mine is when my mom would make White Castles. She would make each one individually and they were always fabulous. Then I came upon an idea to do it in a 9 X 13 pan and WOW! they turned out amazing!

I used:
Dried Chopped Onion (I buy mine at Costco)
2lb Ground Beef, thawed
Shredded Cheese (about 1 cup)
Season Salt (about 2 T)
Rolls (I used my homemade rolls, but you can use any packaged roll)
Optional:
Pickles
Mustard
Ketchup

To start sprinkled the dried chopped Onion liberally on the bottom of my 9 X 13 pan. Then smash the ground beef down until it was thinly covering the entire pan then sprinkle Season Salt over the ground beef evenly.

Cooked the beef in a 400 degree oven for about 10 minutes, then remove it, topped it with the Cheese and put it back in the oven for another 5 minutes (or until melted).

Slice into small squares to fit your rolls. Put the ground beef squares into the rolls and top with your favorite toppings, mine were topped with a sliced Pickle and Mustard.

Chocolate Florentine Cookies


My mother in law LOVES these cookies you can get at Ikea that are very similar to these Florentine cookies, so I decided to make them for her.

I used:
2/3 C Butter
2 C Oats
1 C Sugar
2/3 C Flour
1/4 C Light Corn Syrup
1/4 C Fat Free Milk
1 1/2 t Vanilla Extract
1/4 t Salt
1 11.5oz package of Semi-sweet Chocolate Moresels

Directions:

Preheat oven to 375 degrees.

Melt the butter in a large sauce pan over medium heat. Remove from heat once melted. Add to the Butter: Oats, Sugar, Flour, Corn Syrup, Milk, Vanilla Extract and Salt and mix well.

Drop a teaspoon sized dollop of dough on a foil lined cookie sheet about 3 inches apart. Bake 6-8 minutes or until golden brown around the edges. Let cool completely then peel foil from the backs of each cookie.

(I removed the foil from the cookie sheet and let everything sit on wire cookie racks. When the cookies cooled I would peel them from the foil and then reuse the foil. It is very important that the cookies are cooked until the edges are golden brown, otherwise they will stick to the foil. You can also use silicon baking sheets, but they take a bit longer to cook the cookies on.)

Once all the cookies are cooled, place the Chocolate Morsels in a microwave safe bowl and heat for 1 minute. Stir the morsels and if they need more time to melt place them back in the microwave and heat for 15 second intervals.

Once the Chocolate is completely melted spread a bit of chocolate on the back of one cookie and then top with another cookie to make a "sandwich."

You can drizzle chocolate on top of the cookie "sandwich," but it isn't necessary!
